Chilli Prawn Linguine

280g linguine

2tbsp olive oil

2 garlic cloves, peeled and finely chopped

225g raw king prawns

400g tin chopped tomatoes

1tbsp sundried tomato paste

1 tsp Deelicious Spice Rub - The Hot One

1 lemon

basil or parsley to serve

Serves 4

Put a large pan of water on the boil with a pinch of salt,  cook the linguine as per packet instructions.  Meanwhile , warm the olive oil in a large non stick frying pan, add the garlic and The Hot One Spice Rub, stir in the Sundried tomato paste,  tinned tomatoes and cook until the sauce thickens. Throw in the prawns and squeeze in the juice of half the lemon.  The prawns are cooked when they are pink, this will take about 2-3 minutes. 

Drain the pasta, reserving about 50ml of the cooking water. Add the pasta to the pan and slosh in saved pasta water if the sauce is a little thick.  Serve in large bowls and garnish with a little chopped basil or parsley.
