Chilli & Lime Salmon
Spicy and zesty this is a perfect summer lunch dish
Serves 4
Juice of 1 lime
2 tbsp Olive Oil
1 garlic clove , crushed
1 tbsp Deelicious Classic Chilli Jam
1 tsp Deelicious Spice Rub - The Herby One or The Hot One
4 Salmon fillets
Peppers, red, green and yellow , chopped
1 red onion cut into wedges
Mix lime juice, olive oil, water, garlic, Deelicious Classic Chilli Jam , Deelicious Spice Rub seasoning together to combine, add a splash of water if the mixture is too paste like. Arrange the peppers and onion in a single layer on a baking tray and pour over half of the marinade to coat evenly. Place in the oven to roast for 15 minutes, then remove and lay the salmon fillets on the tray amongst the vegetables and spoon over some more marinade . Bake at 180*c for 15 minutes until the salmon is just cooked .
